Bacon and Egg Macaroni Salad

Ingredients

  • 6 large eggs
  • 1 pound macaroni
  • 1 pound good quality bacon
  • About 1/4 cup grated onion and its juice
  • 1 clove garlic, grated or pasted
  • 1 rounded tablespoon Dijon mustard
  • About 3 tablespoons white balsamic vinegar or white wine vinegar
  • 1/2 cup extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 1/2 teaspoon hot sauce
  • 1 (4-ounce) jar chopped pimientos, drained
  • 1/2 cup chopped flat-leaf parsley
  • 2 cups uncooked elbow macaroni
  • 1 large tomato, finely chopped
  • 2 celery ribs, finely chopped
  • 5 green onions, finely chopped
  • 1-1/4 cups mayonnaise
  • 5 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 to 1/4 teaspoon pepper
  • 1 pound bacon strips, cooked and crumbled
  • 2 cups uncooked elbow macaroni
  • 1 large tomato, seeded and chopped
  • 1 cup frozen peas, thawed
  • 1/2 cup shredded reduced-fat cheddar cheese
  • 1/2 cup chopped celery
  • 1 hard-cooked egg, chopped
  • 2 green onions, sliced

DRESSING

  • 3/4 cup reduced-fat mayonnaise
  • 1 cup fat-free plain yogurt
  • 2 tablespoons sugar
  • 1 tablespoon prepared mustard
  • 1/8 teaspoon celery seed
  • 2 cups uncooked elbow macaroni
  • 1 cup fat-free mayonnaise
  • 2 tablespoons sweet pickle relish
  • 2 teaspoons sugar
  • 3/4 teaspoon ground mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup chopped celery
  • 1/3 cup chopped carrot
  • 1/4 cup chopped onion
  • 1 hard-cooked egg, sliced
  • Dash paprika

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Place the eggs in a small pot and cover with water. Bring to a boil over high heat, cover the pot, turn off the heat, and let the eggs stand for 10 minutes. Submerge the eggs in cold water to shock them. Crack the eggs and soak in the cold water. When cool, peel and chop.
  3. Meanwhile, bring a large pot of water to a boil to cook the macaroni. Arrange all but 6 slices of bacon on a slotted baking sheet and put into the hot oven. Bake for 15 minutes, or until bacon is crisp. When cool enough to handle, chop and reserve.
  4. Chop the remaining bacon and add to the boiling water along with the macaroni. Cook until the pasta is al dente. Drain, rinse, and discard the boiled bits of bacon from the pasta.
  5. While the pasta cooks, add the grated onion, garlic, Dijon, and vinegar to a mixing bowl. Whisk in the extra-virgin olive oil and season with lots of salt, pepper, and hot sauce. Add the pasta, chopped eggs, pimiento, parsley, and chopped crisp bacon pieces. Toss to combine and serve.
  6. Cook macaroni according to package directions; drain and rinse in cold water. Transfer to a large bowl; stir in tomato, celery and green onions.
  7. In a small bowl, whisk mayonnaise, vinegar, salt and pepper. Pour over macaroni mixture and toss to coat. Refrigerate, covered, at least 2 hours. Just before serving, stir in bacon. Yield: 12 servings (3/4 cup each).
  8. Cook macaroni according to package directions; drain and rinse in cold water. In a large bowl, combine the macaroni, tomato, peas, cheese, celery, egg and onions.
  9. In a small bowl, combine the dressing ingredients. Pour over macaroni mixture and toss to coat. Refrigerate until serving. Yield: 10 servings
  10. Cook macaroni according to package directions; drain and rinse with cold water. Cool completely.
  11. For dressing, in a small bowl, combine the mayonnaise, pickle relish, sugar substitute, mustard, salt and pepper. In a large bowl, combine the macaroni, celery, carrot and onion. Add dressing and toss gently to coat.
  12. Refrigerate until serving. Garnish with egg and paprika. Yield: 8 servings
