Ingredients
2 cups raw log-grain white rice (preferably not converted)
1 tablespoon unsalted butter or olive oil
2 teaspoons kosher salt
3 cups water
Instructions
In a medium saucepan, with a tight-fitting lid, combine water, salt, and butter or oil.
Bring to a boil over medium-high heat.
Add rice and stir well.
When the liquid returns to a simmer/gentle boil, cover the pot, and then reduce heat to the lowest possible setting. Cook the rice undisturbed for 20 minutes. Do not remove the lid or stir while the rice is cooking.
When rice is done, remove the saucepan from heat and let rice stand, covered, for 5 minutes.
To serve, remove the lid and turn rice over carefully from the bottom with a fork. Transfer to a serving bowl and serve immediately.
