  • 3 tablespoons extra-virgin olive oil
  • 8 turkey sausages
  • 5 large cloves garlic, sliced
  • 1 pound cherry tomatoes, quartered
  • 2 dry red hot peppers
  • Salt and freshly ground black pepper
  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • 2 bay leaves
  • Fresh flat-leaf parsley (leaves only), chopped


Heat oil in a large high-sided saucepan over medium-high heat. Add sausages and brown on all sides, for about 8 minutes. Remove the sausages from the pan and reserve.
Add the garlic and sauté until golden and brown. Stir in tomatoes, red peppers and season with salt and pepper. Lower the heat. Cover. Simmer for 10 minutes, until the tomatoes have broken down and thickened to a sauce-like consistency. Add the browned sausages and any juice left behind. Add beans and bay leaves. Stir well. Cover. Simmer for another 10 minutes.

Top with chopped parsley and serve.
