Servings: 4 to 6


  • 2 tbsp. bacon grease
  • 1 pounds boneless beef chuck, cut into 3/4-inch pieces
  • Kosher salt and freshly ground pepper
  • 5 cloves garlic, finely chopped
  • 1 medium onions, finely chopped
  • 1/2 red bell pepper, finely chopped
  • ½ green bell pepper, finely chopped
  • ½ poblano pepper, finely chopped
  • Salt and freshly ground black pepper
  • Chili powder, recipe follows
  • 1 (15-ounce) can black or pinto beans, drained and rinsed (recommended Goya)
  • 1 (15-ounce) can kidney beans, drained and rinsed (recommended Goya)
  • 1 (24-ounce) can whole tomatoes, undrained and crushed
  • 1 cup good beef or chicken broth (recommended homemade)
  • ½ cup freshly chopped cilantro leaves
  • 1 tablespoon grated semisweet chocolate
  • 1 tbsp. freshly squeezed lime juice
  • Sour cream, for serving
  • Freshly shredded Cheddar, for serving
  • Chopped scallions, for serving
  • Diced avocado, for serving
  • Chopped pickled Jalapenos, for serving
  • Cooked plain white long-grain rice

For the chili Power:

  • 1/2 tablespoon chili powder
  • 2 teaspoon ground cumin
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon ancho chili powder
  • 1 teaspoon smoked Spanish paprika
  • 2 teaspoons dried Greek or Mexican oregano leaves, crumbled
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste


Mix the chili power ingredients and set aside.

Pat the beef dry and season well with salt and pepper. Set aside

Heat bacon grease in a 4 ½ qtr. pot over medium-high heat. Add meat and brown about 4 minutes. Add the peppers, onions and garlic. Add salt and pepper to taste. Cook until the vegetables are tender. Add chili powder mixture. Cook until seasonings are aromatic. Add tomatoes. Stir in beans and broth. Add chocolate and cilantro. Turn the heat down to low and simmer for 2 hours. Stir in lime juice. Remove from heat.

Serve over plain white rice garnish with sour cream, cheese, jalapenos, avocados and scallions.
