  • 5 lb. red or Yukon gold potatoes
  • 6 slices thick cut bacon
  • 1 medium onion
  • 7 eggs, beaten
  • 1-12 oz. can evaporated milk
  • 1 tbsp. salt, or more to taste
  • 1 tsp. freshly ground pepper
  • Sour cream, for serving


Cook bacon until crispy. Set aside to cool and let the bacon fat cool as well. When bacon is cool, chop finely in food processor.

Pre-heat oven to 400 degrees F. Greased a 10 x 15 baking dish and set aside

Beat eggs, milk, salt and pepper as well as the reserved bacon fat. Add bacon and mix well. Set aside.

Peeled potatoes and shred with onion in a food processor. Mix potatoes and onion well with the egg mixture and pour into the prepare baking pan.

Place in the oven and bake for 1 hour. It will pull from the sides of the pan and a knife should come out clean.

Slice and serve with sour cream on top. Serve ham, Polish or Lithuanian sausage an the side.
